Well, it's football season and the big game fast approaches.
I think of it as kind of like a man holiday. And holidays mean food, which is always A-okay with me. The great thing about man food is that it's easy: corn dogs, burgers, chips, hot wings, etc. I guess boys are hard to shop for but easy to cook for.

My hubs' squadron is about 98% testosterone so you can bet those boys love some football, and hubby always gets together with them to watch the big games. Last year we were living on a small, tight-knit military base in good ol' Texas and could see football being played in every living room we passed. I think we ourselves stopped by about three different houses to watch the same game. I love the social aspect of this season.

With hubby's input, I came up with an easy, man-pleasing recipe that he can bring along with him to all those homegating parties. We stopped by the Walmart deli to grab some of their fresh Tyson Buffalo boneless wings and chose some select ingredients to complement that Buffalo yumminess. The way hubby gobbled up every last chip in this picture tells me I did alright:



Three Cheese Buffalo Nachos

  • 1 lb. Tyson Buffalo boneless chicken wings, chopped
  • 1/2 bag tortilla chips
  • 1/4 medium onion, finely chopped
  • 1 medium jalapeno, sliced
  • 2 oz. sliced olives
  • 1/2 can (about 7 oz.) corn kernels
  • 1/4 bunch cilantro, stemmed and chopped
  • 1 cup (4 oz.) Mexican blend shredded cheese
  • 5 oz. queso fresco, crumbled
  • 1-2 oz. crumbled bleu cheese


Directions:

Heat oven to 400F.
Line a large baking sheet with aluminum foil.

Spread your tortilla chips over the lined baking sheet. Sprinkle half of the Mexican blend cheese and half of the queso fresco over top of them.
Then evenly spread the chicken, onions, jalapenos, olives and corn. Take your remaining Mexican and queso fresco cheeses and sprinkle over the top. Bake for 8-10 minutes until the cheese is hot and melted.

Let the pan cool for a few minutes before garnishing with the bleu cheese and cilantro. Serve immediately.

    1. Oh I'm not so into it either but like I said I love the social aspect! I figure big games are like the Olympics...they are fun to get into even if you know nothing about them hehe. And fun to get together with good food and good people~
