The leaves here in California are starting to change, and though they aren't many I couldn't be happier. For some reason, this season more than any other brings so many memories with it. Back in high school in NY, selling hot chocolate at the football concession stand on a crisp morning. Or my last year of college, working at the chilly football stadium and waiting afterwards for my then-fiance to meet me. There are certain things that make it really feel like Fall for me: cool weather, hot chocolate, and football.

Today I'm sharing another football inspired recipe: a meaty mix that is amazing in tacos, nachos and almost any other tailgating food you can think of. This is a favorite recipe that I've been planning to share for a long time now. Hubby created these this one day and it's probably been our most-made meal since because it's easy, yummy, and full of man-pleasing ingredients. Not being a huge meat-eater, even I love it, so you know it's a real all-around crowd-pleaser. Think savory steak slices, chorizo, eggs, cilantro and Pace® salsa, aka pretty much everything my hubby loves in the world. I used both the Pace® Picante Salsa Hot and Pace® Chunky Salsa Medium because hubby and I have slightly different tastes. I love my salsa as chunky as possible and a little spicy, but not too much. Hubby just likes his as hot as possible, and Pace® uses handpicked jalapenos that satisfy his spicy cravings. So I included one in each recipe, but you choose the Pace® that suits you.

Meaty Mix
  • 1.5 lbs flank steak
  • 1 pkg. (10 oz.) chorizo
  • 3/4 pkg. Memphis BBQ seasoning

Directions:

Preheat oven to 250F. Cover a baking pan with aluminum foil.

Coat both sides of the flank steak with the Memphis bbq seasoning. Place on the baking sheet and bake for 3 hours.

When the flank steak is about done, cook the chorizo over medium heat for 4-5 minutes or until cooked through. Slice the flank steak across the grain and combine with the chorizo.

Tacos
  • 5 eggs
  • flour tortillas
  • Pace® Picante Salsa Hot
  • cilantro (opt.) 
  • meaty mix
Whisk together the 5 eggs and scramble over medium heat until cooked. Layer tortillas with eggs, meaty mix, Pace® salsa and cilantro (opt.) and enjoy!

Nachos
  • 1 pkg. Mexican blend shredded cheese
  • 1 bag tortilla chips
  • Pace® Chunky Salsa Medium
  • cilantro (opt.)
  • meaty mix
Preheat oven to 400F. Line a large baking sheet with aluminum foil. Spread the tortilla chips across the baking sheet and sprinkle with the cheese and meaty mix. Place in oven until the cheese is melted. Remove from heat and top with Pace® and cilantro (opt.).

  1. Mmmm. Mmmm. Mmm. Tacos and nachos are really my favorite "cheat" food . Sadly I don't eat them nearly as often as I should (or would like). These protein loving tacos are looking so tasty that they are making me crave a taco Tuesday menu...like now!!! But all the grocery shopping is done for the week so I guess the taste buds will have to wait until we get back from Italy to fulfill that craving. P.S. good job hubby. . . coming up with these beauties.

  3. These tacos sound incredible! I love that you used flank steak...and I love that you turned them into a breakfast version.
