Manly Man Chili | Gina Chong
Chili is like my favoritist thing on planet earth. And my Momma's chili is the best. Unfortunately hubby doesn't like it because he says it has too many beans, not enough meat :(:( So I've forever been on the search for a chili that suits us both. Last year this Texas chili was our fav and we made it multiple times, but this year it's been ousted by this one.
This is definitely a man-pleaser. It's mostly meat and has a good kick to it. Also ideal for chili dogs my hubs informed me. But I grew up eating chili with rice and the occasional kimchi (I honestly thought that was normal...).

Why: I decided that next time I want to add corn (I LOVE corn in chili) and hubby said cilantro; basically just a little more freshness to cut through all that heavy meat.

Manly Man Chili
Serves 6-8

  • 1 lb ground beef
  • 1 lb stew meat
  • 1 lb mild breakfast sausage
  • 3 garlic cloves, minced
  • 1 c chopped onions
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 large jalapenos, seeded and chopped
  • 7 oz kidney beans (half can)
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 3 Tbsp chili powder
  • 3 Tbsp cumin
  • 1 Tbsp cayenne
  • 1 tsp oregano
  • 1 can (6 oz) diced green chiles
  • 3/4 tsp green Tabasco
  • 1 tsp salt
  • 1/2 tsp sugar


In a medium bowl, mix together the kidney beans, tomato sauce, diced tomatoes, chili powder, cumin, cayenne, oregano, green chiles, Tabasco, salt and sugar. Set aside.

Prep stew meat by seasoning with the garlic powder and onion powder. Brown it in a heavy pot or dutch oven that you will use for your chili. In a skillet, brown the ground beef with the onions and garlic. Throw that into the pot and then use the same skillet to brown your sausage. Once that is done, mix all of the meat together in the pot and drain out as much grease as you can. 

Pour your tomato mixture over the meat and cook over medium heat for 1-1.5 hours. And voila. Tastes even better the next day. Also good to use for chili dogs, or so I hear ;)
